In today’s post i’d like to show you one of my favorite high-protein vegetarian treats mini protein cheesecakes! I have made this recipe lactose free, but you can certainly adapt this to be completely vegan or to include more dairy.
- 75 g, Kammerjunkere (Nilla Wafers or Digestive Biscuits)
- 29.00 g, plantemargarine (Margerine or Butter)
- 23.00 g, Sukker ( Sugar)
- 175 gram, Original Laktosfri (Lactose Free Cream Cheese)
- 2 large, Egg
- 175 g, Laktosefri Skyr Naturel (Skyr or Greek Yogurt)
- 60 gram, Soy protein (Soy Protein Powder or Whey Protein)
- 220.00 gram, Frozen Raspberries (Frozen Raspberries, blueberries, or strawberries!)
- 100g Splenda or Stevia
Preheat oven to 350f or 175c. In a glass baking dish place silicone cupcake molds. Note: you may also use a cupcake pan for this, however, cooking time may vary.
Break cookies into small pieces with a rolling pin or heavy pot. Combine with melted butter, half the sugar and half the splenda to form a crumble. Fill the bottom of each cupcake mold and pack mixture down with the back of a spoon or press by hand. Pre-bake for 5-6 minutes.
Combine half sugar, half splenda, cream cheese, greek yogurt, and whey protein in a bowl. Mix until smooth and creamy. You may add lemon zest, fresh vanilla, etc. to add additional flavor.
Once the pre-baked crusts have cooled slightly top them with the cheesecake mixture. I recommend an icecream scoop so that each mold is filled evenly. Top each mini cheesecake with frozen berries of choice. Should fit exactly 12 servings.
Pour warm water into the baking dish surrounding the molds in a water-bath and bake for 18-22 minutes. Inside will still be jiggly when done.
Allow to cool completely before removing cheesecakes from silicone molds. Refridgerate for atleast 1 hour before enjoying.
This recipe can be made with many other toppings from blueberries, strawberries, blackberries, to my favorite… thin and crispy oreos (with an oreo thin base)! Experiment to see what you enjoy most and enjoy a tasty, low calorie, high protein treat! 🙂
